I planted only one bed of amaranth this year – but doesn’t it look gorgeous? I bought the red seeds but the seed packet was so tiny that I had to throw in some others, grain amaranth bought at the local Co-op. Due to the heatwave, I had to harvest some of it already, I hope it’s not too early – usually, I harvest when the birds get interested. Amaranth is great really because it gives you so much grain on so little space!
