Jerusalem Artichoke tubers, 3 tubers, Sunchoke, Helianthus tuberosus


I dig the directly out of my garden and prune back a fair bit of the leaves for better transport. As it is bare rooted it needs your immediate attention!

Sunchokes are very easy to grow perenial plants, grown for their starchy tubers.  They reach 2-3 meters height and the flowers look like small sunflowers. My neighbour acrually asked me what these pretty flowers were.

They don’t need much attention and leaft unchecked, they will form large colonies over time. Choose carefully the spot were you want them to grow because it can be difficult to get rid of them as every piece of root left in the ground will resprout.

They are very cold hardy. They can be grown in full sun or light shade. Sunchokes can be earthed up for higher yields. They are best harvested after frost or even in spring for sweetness of the roots, that means you can store them in the soil over winter! The top bit of the plant dies down in winter.

The tuber can be used as any root crop, cooked, baked, fried, even raw. They contain inulin as a starch which helps your body to absorb calcium better.
